Ingredients:

8 oz. Shredded Cooked Pork Loin

2 packaged Flatbread (2 crusts)

1 Tbsp. Olive Oil

1⁄2 cup Barbecue Sauce (divided)

2 cup Shredded Colby Jack Cheese

1/2 small Red Onion (thinly sliced)

1/2 small Red Pepper (diced)

1⁄4 cup fresh Cilantro (chopped)

DIRECTIONS:

1. Preheat grill to medium-low heat. Lightly brush bottoms of flatbreads with olive oil, set aside.

2. In a bowl, add ¼ cup of the barbecue sauce and shredded pork to toss.

3. Spread remaining 1⁄4 cup barbecue sauce evenly on flatbreads leaving 1⁄4 inch border around edges.

4. Top each flatbread with 1 cup shredded cheese, 1 thinly sliced shallots and barbecue pork mixture.

5. Grill flatbreads for 8-10 minutes or until the cheese has melted.

6. Remove flatbreads from the grill and top with 1⁄4 cup cilantro. Slice each flatbread into 4 and serve immediately.
